Cleaning shark

I recently was recently shark fishing in Key Largo, one of sharks I caught died. I don't really know why, it was pretty short fight, I hooked him on the lip with a circle hook, I never took him out of the water. I brought him to boat side and tooka few pics and cut the leader, and the shark sank like a stone. So I got him out of the water and pushed him thru the water for like an hour, and he still wouldn't swim on his own.

Anyways I finally let him and go, and I doubt he made it. I don't really plan on every keeping a shark for meat, but If I every get hook one and he doesn't look like he is going to make it. Is there anything I should know about cleaning them. I read you should gut some sharks immediately if you plan on taking there meat. Also was under the impression most sharks were not good to eat because ammonia in their skin(?) although I'm not really sure on this. [/img]

Looks to be a lemon shark you caught! They are good, you just need to clean it right away.
