See you all in Cabo - JC.

Jc's Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let's get on with the fishing report for this past week.

From The Admirals Kitchen!
Sierra ceviche
is an easy and quick dish to prepare and very comfortable to carry in any container, so that is why I recommend it for a Sunday at the beach with friends or family, although it is delicious to eat at home as well.

Ingredients:
1 kilo saw fish, ground, they can sell it like that or ask to be ground
1/4 teaspoons ground oregano
15 limes
2 serrano chiles, finite chops
1 red onion, medium, finely chopped
1 cucumber, peeled and diced small
1 tomato, finely chopped
15 sprigs fresh cilantro, washed and finely chopped
salt, and pepper to taste

INSTRUCTIONS

1. Put the ground saw in a good size container and season with enough salt and pepper. Add the juice of the lemons and oregano and stir very well.

2. The fish is left to marinate for 10 to 15 minutes so that it is well tanned. When the fish is well tanned (it turns whiter) you can either strain it to remove the excess lemon, or if you like a juicy ceviche you can leave the juice. The fish already has all the flavor of the lemon, the salt and the penetrated oregano, so it is a matter of taste and preference if it is left with the lemon or strained.

3. Add the chili, the red onion, the cucumber, the tomato and the coriander and mix everything very well.

4. It can be served with tostaditas spread with mayonnaise, with tortilla chips or, as mentioned in the introduction, with the "duros" of large flour pork rinds that are sold in candy stores. Delicious accompanied with bottle sauce.

SUMMER TENTALIZER
Vodka Lemonade

Ingredients
• 24 oz. Simply Lemonade
• 1 c. vodka
• 4 oz. simple syrup*
• club soda
• 4 sprigs fresh peppermint
• 1 lemon, cut into rounds

*Simple Syrup
• 1 c. granulated sugar
• 1 c. water
• 1/2 c. fresh strawberries, sliced
• 1/2 c. rhubarb, diced into 1/2-inch bites

Directions
In a pitcher with ice, mix the lemonade with the vodka and simple syrup**. Fill a highball glass (or glasses) to the top with ice. Add vodka lemonade until the glass is three-quarters full. Top off with club soda and stir to mix. Garnish with a lemon round and sprig of mint.

**Simple Syrup Directions
Combine water and sugar in a saucepan over high heat. As the mixture begins to heat up, add your fruit. Bring it to a boil. As soon as the sugar has completely dissolved, remove the mixture from the heat. Let the mixture steep for 30 to 40 minutes. Strain it, leaving only the syrup. Cool to room temperature.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Until next time good fishing and we hope to see you in Cabo soon. Come by the office here in Cabo and get all the latest up to date fishing report.
