Sanibel Island Spring Fishing

Hi all, Im a big fisherman but I mainly fish freshwater in the Northeast. I have been to Sanibel Island 3 times now and always say Im going to fish but never do. Well Im going back in April and I definitly want to do it this year. I will most likely be fishing from shore in the surf or potentially in the canals (not sure if there are fish in there) I was hoping for some tips. I plan to visit the bait store and im sure they will be helpful on what to use but i was hoping to get a head start. What are the best fish to target when fishing from shore (either for eating and for the fight) and what times of day are best to catch them. The two names that seem to keep coming up are snook and red fish. I have fished in the Gulf before but much farther out on a boat for grouper and such. Any info at all would be great!
