The fishing was very slow last week, most of the fish have moved due to the very cold water (63 degrees) and green, very strong wind.

Jc's Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let's get on with the fishing report for this past week.

WEATHER: For Cabo San Lucas in the coming two weeks the average daytime maximum temperature will be around 27°C, with a high for the two weeks of 30°C expected on the afternoon of Friday 8th. The mean minimum temperature will be 18°C, dipping to its lowest on the morning of Monday 4th at 16°C. Expect the coming 14 days to remain predominantly dry. On the whole winds are likely to be moderate.

Easy Lemon Butter Fish in 20 Minutes
This Easy Lemon Butter Fish only takes 20 minutes and a handful of ingredients. It's a delicious and nutritious white fish recipe. Pair with rice and vegetables.

INGREDIENTS

4 good-sized firm white fish fillets, about 6 inches long, 1-inch thickness (cod, halibut, or mahi would work well.)
3 TB melted butter (I use salted, but unsalted is fine)
Juice and zest from 1 medium lemon
1/2 tsp kosher salt, plus extra to taste
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/4 tsp freshly ground black pepper
3 TB olive oil
freshly chopped basil or parsley leaves, for garnish and flavor
extra lemon slices for serving

INSTRUCTIONS

1. Use paper towels to thoroughly pat-dry excess moisture from fish fillets – this step is crucial for fish to brown nicely in pan. Set aside.
2. In a bowl, combine melted butter, lemon juice and zest, and 1/2 tsp kosher salt. Stir to combine well. Taste and add a bit more kosher salt, if desired.
3. In a separate bowl, combine the remaining 1/2 tsp kosher salt, paprika, garlic powder, onion powder, and black pepper. Evenly press spice mixture onto all sides of fish fillets.
4. In a large, heavy pan over medium high heat, heat up the olive oil until hot. Once your oil is sizzling, Cook 2 fish fillets at a time to avoid overcrowding (allows for even browning.) Cook each side just until fish becomes opaque, feels somewhat firm in the center, and is browned – lightly drizzle some of the lemon butter sauce as you cook, reserving the rest for serving. Take care not to over-cook, as that will result in a tougher texture. Season with extra kosher salt and freshly ground black pepper to taste.
5. Serve fish with with remaining lemon butter sauce, basil or parsley, and lemon wedges.

Notes
** Be sure to use coarse kosher salt, not fine table salt. Kosher salt is much milder and less salty. ** The actual cook time varies, depending on type, cut, and starting temp of fish. I typically cook about 3-4 minutes per side. I check for doneness by lightly pressing fillet centers for firmness. Once it feels somewhat firm, it's usually done. ** Serve with Perfect Instant Pot Brown Rice or Best Easy Roasted Vegetables Recipe for a healthy meal that happens to be gluten-free.

SUMMER TENTALIZER
Tequila Sunrise

INGREDIENTS
2 tsp grenadine
ice
50ml tequila
1 tbsp triple sec
1 large orange, or 2 small ones, juiced
½ lemon, juiced
1 cocktail cherry

INSTRUCTIONS

Step 1
Pour the grenadine into the base of a tall glass and set aside. Fill a cocktail shaker with ice and add the tequila, triple sec and fruit juices. Shake until the outside of the shaker feels cold.

Step 2
Add a few ice cubes to the serving glass then carefully double strain the cocktail into it, trying not to disturb the grenadine layer too much. Add more ice if needed to fill the glass then garnish with a cherry on a stick or cocktail umbrella.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
