From The Admiral Kitchen!
Wahoo's Grilled Fish Tacos
These copycat Wahoo's char-grilled fish tacos are fresh and flavorful, combining influences from Mexico, Asia, and Brazil.

For the Citrus Slaw
2 ounces coleslaw mix
1/2 ounce thinly sliced red onions
1 teaspoon minced cilantro
1 teaspoon lime juice
1 teaspoon lemon juice
1/4 teaspoon each, salt and pepper

Green Sauce

1 tablespoon fresh flat-leaf parsley
1 tablespoon cider vinegar
1 tablespoon water
1 teaspoon minced canned roasted jalapeńos
2 tablespoon fat free mayonnaise
Salt and pepper to taste

For the Tacos
8 ounces fresh mahi-mahi, Wahoo, or other white fish
Garlic salt
Oil for brushing the grill
8 corn tortillas
1 to 2 ounces freshly grated cheddar and Monterey jack cheese
1/4 cup chili garlic sauce
Citrus slaw
Green sauce
Fresh pico de gallo

To Make the Citrus Slaw
1. Mix the slaw ingredients in a bowl.

To Make the Green Sauce
1. Add all of the ingredients to a blender and pulse to combine.

To make the Tacos
1. Season the fish filets with the garlic salt.
2. Heat a grill or grill pan, and brush the grill grates with oil.
3. Grill the fish 2 to 3 minutes per side.
4. Cook the tortillas over an open flame on your stovetop or on the grill.
5. Assemble the tacos by adding the fish, cheese, chili garlic sauce, cabbage, pico de gallo, and green sauces.
6. Serve with white rice and black beans.

Red Sangria
Here's how to make the best red wine sangria…the Spanish way! Just a handful of ingredients and fruit make a bold and refreshing drink.

1 orange
1 green apple
3 tablespoons sugar
1 bottle dry red wine, chilled
¼ cup brandy
¼ cup orange liqueur, such as Cointreau
1 lemon, sliced into rounds
Sparkling water, for serving (optional)

1. Chop the orange (leaving the peel on) and apple into bite-sized chunks, then add them to the bottom of a pitcher. Sprinkle them with sugar and stir. Let them stand for 20 minutes at room temperature.
2. After 20 minutes, pour in the red wine, brandy, orange liqueur, and lemon rounds. Stir and refrigerate 1 to 4 hours. (Don't go beyond 4 hours or the fruit texture starts to degrade.)
3. Pour the sangria into ice filled glasses and top with a splash of sparkling water (if desired). Add fruit to each glass, preferably on long skewers for easy snacking.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Until next time good fishing and we hope to see you in Cabo soon. Come by the office here in Cabo and get all the latest up to date fishing report.
