Grilled Mahi Mahi with Balsamic Tomato Salad

FOR THE FISH
4 Mahi Mahi Fillets
3 tablespoons olive oil
3 cloves garlic, finely minced
2 teaspoons dried basil, or 2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

FOR THE SALAD
2 roma tomatoes, diced
2 tablespoons chopped fresh basil
1/2 tablespoon olive oil
1 cloves garlic, minced
salt and fresh ground pepper, to taste
fresh grated parmesan
Balsamic glaze, for topping

Grill Method
1. Preheat an outdoor grill to medium-high heat; about 425˚F to 450˚F.
2. Pat dry the fish fillets and set on a plate.
3. In a mixing bowl, whisk together the oil, garlic, basil, salt and pepper. Brush fish with the oil mixture.
4. Brush grill grates with oil so that the fish doesn't stick.
5. Grill the fish for 4 to 5 minutes per side, or until nice golden grill marks appear and the flesh is set. Don't overcook or the fish will be dry and rubbery.
6. In the meantime, prepare the salad by combining prepared tomatoes, basil, oil, garlic, salt and pepper in a mixing bowl; stir until well incorporated.
7. Remove fish from the grill and transfer to a plate. Add some salad over each fish fillet.
8. Grate fresh parmesan cheese over the salad and drizzle with balsamic glaze. Serve and enjoy!
Stove Top Method
9. Prepare the fish and tomato salad per the instructions above.
10. Heat a nonstick pan or a cast iron skillet over medium-high heat.
11. When pan is hot, cover the bottom of the pan with olive oil.
12. Add the Mahi Mahi to the pan and cook for 3 to 4 minutes per side, or until set.
13. Remove from pan; garnish with prepared tomato salad and serve.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Until next time good fishing and we hope to see you in Cabo soon. Come by the office here in Cabo and get all the latest up to date fishing report.
