Marlin
Very good striped marlin from 80Lb to 150 Lb at Los Arcos, Margarita, Migrino and Horseshoe,
we caught 5 striped marlin on Wednesday, 1 on Thursday and 2 on Friday.

Dorado
Wide open dorado bite, we have been catching the limit every day, good sizes ranging from 15 pounds up to 30 pounds, caught at the Lighthouse, Los Arcos and the Horseshoa on lures, ballyhoo, and live bait.

Tuna
very spotty, some tuna appear a few days and then disappear for a while.

Wahoo
Few reports of wahoo.

Rooster
No reports.

Inshore
Good dorado bite and few wahoo.

Weather:
The outlook for Cabo San Lucas in the week ahead shows the average daytime maximum temperature will be around 31°C, with a high for the week of 33°C expected on the afternoon of Saturday 4th. The mean minimum temperature will be 22°C, dipping to its lowest on the morning of Sunday 29th at 20°C. The week will remain predominantly dry. On the whole winds are likely to be moderate.

Dorado with Lemon Caper Sauce

Embark on a culinary journey with the delicate flavors of Dorado, complemented by a tangy Lemon Caper Sauce that will transport your taste buds to a Mediterranean paradise.

Ingredients:

For the Dorado:

4 Dorado fillets
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste

For the Lemon Caper Sauce:

2 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons capers, drained
Juice of 1 lemon
1/4 cup dry white wine
Fresh parsley, chopped for garnish

INSTRUCTIONS:

Dorado:

Step 1:
Preheat your oven to 375°F (190°C).

Step 2:
In an ovenproof skillet, heat the olive oil over medium-high heat.

Step 3:
Season the Dorado fillets with dried oregano, salt, and pepper.

Step 4:
Place the fillets in the skillet and sear for 2-3 minutes on each side, until they are golden brown.

Step 5:
Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes, or until the fish is cooked through and flakes easily.

Lemon Caper Sauce:

Step 1:
In a separate saucepan, melt the unsalted butter over medium heat.

Step 2:
Add the minced garlic and sauté for about a minute until fragrant.

Step 3:
Stir in the capers and cook for an additional minute.

Step 4:
Pour in the lemon juice and white wine, and let it simmer for 2-3 minutes until the sauce slightly reduces and thickens.

Serving:
Place the cooked Dorado fillets on plates and drizzle the Lemon Caper Sauce over them. Garnish with fresh chopped parsley. The delicate Dorado fish with the tangy Lemon Caper Sauce creates a culinary masterpiece that will transport you to a Mediterranean paradise.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
