Here is my favorite recipe for snook – Snook Fingers – it's really very simple and consists of deep frying lightly breaded fillets.

The breading is made from Fresh Bread. Any bread will do, but I prefer the texture and taste of Honey Wheat bread. Take several slices of the bread and place them in a blender or food processor along with garlic powder, paprika, black pepper and salt (spices to taste). Blend the mixture until the bread is cut down to medium size crumbs, but not pulverized into a powder.

Cut your snook fillets into 4"-6" fingers, approx. 1" thick and 1" wide.

Mix a couple of eggs with some milk in a bowl. Soak the fish fingers in the egg and then dredge them in the bread crumb mixture. Fry in peanut oil at 375 degrees.

Result: light and crispy fish fingers. Enjoy
